Thanks to a carefully considered concept, transport and production routes were kept to an absolute minimum: animals from the farm itself and from neighboring producers are processed in the on-site slaughterhouse, refined in adjacent production facilities, and sold directly in the farm shop as meat, sausage, and cheese products. This closed-loop system is complemented by a bistro, where selected specialties from the in-house butchery are transformed into freshly prepared dishes. The result is a functional interplay of agriculture, craftsmanship, direct marketing, and gastronomy – all united under one roof, with efficient spatial organization and minimal distances between each stage of production.

The Pretzhof Gasteig is located in a traditional craft district, an area not typically known for distinguished architecture. Nevertheless, the striking, dark building makes a bold statement in its surroundings. Wrapped in a vertical wooden cladding of brushed and charred spruce boards, the structure stands out both functionally and aesthetically. This choice of material and color not only reflects traditional craftsmanship but also lends the building the presence of a distinctive landmark. The architectural design of the Pretzhof is giving the building a clear identity. The color and materiality come together harmoniously, evoking the internal production process – the curing of “Speck” – and thus creating a direct visual connection between form and function.

Meat processing

The black, charred wood on the façade subtly references a central function of the building: the traditional curing of “Speck”. This material choice continues throughout the interior, where glossy black tiles reinforce the building's artisanal character. In harmonious contrast, the warm, light oak furniture creates an inviting, yet timeless atmosphere within the space. Slaugtherhouse

The Pretzhof Gasteig stands out as a striking structure within the traditional craft district, with its vertical façade made of brushed and charred spruce boards creating a strong visual presence. The spatial layout is clearly defined: The basement houses an EU-certified slaughterhouse for the farm’s own animals as well as those from the immediate surroundings, supplemented by workspaces for meat processing, curing, brining, and storage. A spacious wine cellar (Pretzhof Selection) completes the functional program. The ground floor is entirely dedicated to the slaughtering and processing operations, while the first floor features a shop offering Pretzhof's products along with a carefully curated selection of wines. Additionally, the upper floor houses a bistro with an outdoor terrace. Great emphasis was placed on authentic, simple, yet high-quality materials in the Pretzhof Gasteig. The charred wood cladding, handcrafted tiles, and solid wood furniture in the interior create an atmosphere of simplicity and permanence. This material concept is complemented by well-balanced general lighting, accentuated by strategically placed designer lamps. The architectural design impresses with its homogeneity, enabling all functions to be seamlessly integrated under one roof. The building not only stands out due to its thoughtful design but also for its distinctive aesthetic, making a clear statement in the industrial district.

Bistro
The material of the charred wood subtly unites the building’s various functions, bringing them together and grounding them in the pragmatic context of the craft district. This choice of material creates a clear, resolute space that makes a strong presence without being overbearing – a place that respectfully integrates into its surroundings.

Bio

Founded in 1989 by Karl Kerschbaumer and Harald Pichler, the architectural studio has evolved over the decades into a dynamic, forward-thinking practice. Since the end of 2020, Matylda Gosciniak, Gabriel Kerschbaumer, and Anton Treyer have joined forces to complete the current leadership team under the name KUP-ARCH.
Operating within a framework of continuous collaboration, the studio develops projects that place the client and their needs at the forefront, while maintaining a strong sensitivity to context, site, and surrounding environments.
The team consistently seeks to extend its design ambitions beyond the conventional brief—aiming to generate social and cultural value within the built environment whenever possible. KUP-ARCH’s scope of work spans the full architectural process, from conceptual design to construction detailing, site supervision, and interior fit-out. The practice is focused on public competitions, commercial architecture, and bespoke private residences.
