The concept stems from the aim to extend the restaurant’s gastronomic experience towards the outside, offering an experience that remains "immersed" in the mood of the restaurant, thanks to the creation of architectural "filters" that enclose the space making it intimate and well defined in terms of atmosphere and harmony. The dehors is conceived as an immersive urban refuge, able to dialogue with the contemporary architecture of Porta Nuova and infuse quiet and well-being thanks to the warm and elegant color palette. Architect and Chef have worked together to offer an exclusive experience, combining design, technology and an optimal microclimate within an elegant architectural structure, designed to welcome guests in every season.

Outside Perspective at night

The design of the Dehors was conceived to harmonize with the innovative buildings that characterize the area of Porta Nuova in Milan. The structure has essential and minimal lines that guarantee a perfect integration with the surrounding environment, offering a stylish "refuge" for guests, which dialogues with the environment through transparencies, reflections and visual filters, strengthening the link between high-level catering and the city. The windows, reflecting the greenery outside, give the impression to the guests of being surrounded by vegetation, while being in a fenced space. To delimit the area is a large brise soleil that allows to create an interesting visual effect between inside and outside, thus making the urban environment an essential part of the experience.

Outside Perspective

The exterior of the Dehors was made using painted metal slats to achieve a balance between functionality, elegance, and resistance to atmospheric agents. The burnished finish of the aluminium sunshade guarantees durability, while maintaining a high aesthetic quality. This choice highlights the desire to integrate harmoniously with the modern urban context of Porta Nuova, respecting the refined identity of the restaurant.

The materials used for the structure and interior of the Dehors have also been selected for their sustainable characteristics. The flooring is made with slats of WPC, innovative composite wood that can be regenerated to 100% several times at the end of its life cycle. Access to the area is from inside the restaurant through a portal made of Fenix NTM, a material with surface nanotechnology that allows self-sanitation. In addition, all materials used are easily recyclable. The outside has systems for controlling and regulating the internal microclimate, thanks to radiant heating and ventilation systems and devices that reduce sun and wind radiation, such as stopsol glass and retractable curtains, making the space comfortable in all seasons.

View from the outside

The Dehors made for Restaurant Berton in Milan is a perfect combination of elegance, innovation and functionality, thanks to the close collaboration between the Architect and the Chef himself. It offers a natural extension of the internal space, allowing to welcome more customers and improve the gastronomic experience with a direct contact with the external environment. A fundamental aspect of the project is the use of space in all seasons, made possible by the study of the internal microclimate in order to maximize the well-being of users. The space is equipped with radiant heating systems and ventilation systems, while all around the perimeter have been installed stopsol glass and retractable curtains able to protect from direct radiation of the sun and the wind. In addition, the materials have been carefully selected: functional but refined, able to resist atmospheric agents without compromising their aesthetics or resistance. The access portal to the Dehors is equipped with an air curtain system to prevent thermal discomfort between the interior and exterior space. The five tables are monolithic elements made of Jatoba Brown stoneware in two different sizes, equipped with two internal bag hangers to ensure additional comfort for users. The purpose of space design is to create solutions that improve both comfort and aesthetics, as “form and function” should always be in harmony.
